Lemon Cannellini Bean Salad

Lemon Cannellini Bean Salad

Ingredients:

  • 1 can cannellini beans
  • 1/2 cup celery leaves and tips, diced
  • 1/2 lemon, juiced
  • paprika

Directions:

  1. Combine beans, celery, and lemon juice in a bowl and mix.
  2. Sprinkle with paprika.

Split Pea Soup

Split Pea Soup

Ingredients:
  • 2 cups dried peas, soaked overnight, drained and rinsed
  • 1 red onion, diced
  • 2 carrots, chopped
  • 2 celery ribs, chopped
  • 5 garlic cloves minced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 2 cups water
  • 1 tsp cumin
  • 1 tsp pepper
  • 1 tsp salt
  • 2 tsp oregano
  • 2 bay leaves
Directions:
  1. In a large pot, heat oil over medium-high heat.
  2. Add red onion and saute until soft.
  3. Add garlic and let bloom.
  4. Add seasoning and let bloom.
  5. Add carrots and celery and cook for a few minutes.
  6. Add peas, broth, and water and bring to a boil.
  7. Reduce heat and simmer until peas are soft.
  8. Puree in blender (in batches).
  9. Return to pot, season with salt and pepper to taste.

Parsley and Rice Soup

Parsley and Rice Soup

Ingredients:
  • 1 large onion, finely diced
  • 2 carrots, finely diced
  • 2 celery stalks, finely diced
  • 3 garlic cloves, minced
  • 1/2 bunch parsley, roughly chopped
  • 1/2 cup rice
  • 4 cups water
  • salt
  • pepper
Directions:
  1. Brown onions in a pot.
  2. Add garlic, celery, and carrots and roast 5 minutes or until carrots start to get tender.
  3. Add parsley, rice and water, bring to a boil, reduce to a simmer and cook for 15-20 minutes or until rice is cooked "al dente" and carrots are tender.
  4. Season to taste. 

White Bean and Kale Soup

White Bean and Kale Soup

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can white beans, rinsed
  • 1/2 cup rice
  • 1 bunch kale, stemmed and chopped
  • 8 cups water
  • salt
  • pepper
Directions:

  1. In a large pot, heat oil over medium heat, add onion and brown.
  2. Add garlic, carrots, and celery and saute for a few minutes.
  3. Add rice and water and bring to a boil, then reduce heat and simmer until carrots are almost tender.
  4. Add kale and simmer a few minutes, until wilted.
  5. Season to taste.
