Split Pea Soup
Ingredients:
- 2 cups dried peas, soaked overnight, drained and rinsed
- 1 red onion, diced
- 2 carrots, chopped
- 2 celery ribs, chopped
- 5 garlic cloves minced
- 2 tbsp olive oil
- 4 cups vegetable broth
- 2 cups water
- 1 tsp cumin
- 1 tsp pepper
- 1 tsp salt
- 2 tsp oregano
- 2 bay leaves
- In a large pot, heat oil over medium-high heat.
- Add red onion and saute until soft.
- Add garlic and let bloom.
- Add seasoning and let bloom.
- Add carrots and celery and cook for a few minutes.
- Add peas, broth, and water and bring to a boil.
- Reduce heat and simmer until peas are soft.
- Puree in blender (in batches).
- Return to pot, season with salt and pepper to taste.
Parsley and Rice Soup
Ingredients:
- 1 large onion, finely diced
- 2 carrots, finely diced
- 2 celery stalks, finely diced
- 3 garlic cloves, minced
- 1/2 bunch parsley, roughly chopped
- 1/2 cup rice
- 4 cups water
- salt
- pepper
- Brown onions in a pot.
- Add garlic, celery, and carrots and roast 5 minutes or until carrots start to get tender.
- Add parsley, rice and water, bring to a boil, reduce to a simmer and cook for 15-20 minutes or until rice is cooked "al dente" and carrots are tender.
- Season to taste.
White Bean and Kale Soup
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can white beans, rinsed
- 1/2 cup rice
- 1 bunch kale, stemmed and chopped
- 8 cups water
- salt
- pepper
Directions:
- In a large pot, heat oil over medium heat, add onion and brown.
- Add garlic, carrots, and celery and saute for a few minutes.
- Add rice and water and bring to a boil, then reduce heat and simmer until carrots are almost tender.
- Add kale and simmer a few minutes, until wilted.
- Season to taste.
