Miso Glazed Salmon

Miso Glazed Salmon

Ingredients:

  • 2 salmon filets
  • 1 tbsp shiro (white) miso paste
  • 1 tbsp mirin
  • 1 tbsp sesame seed oil
  • 2 tbsp palm sugar
  • 3 tbsp soy sauce

Directions:

  1. Heat all ingredients except for the salmon in a pan over medium heat until all ingredients are melted and sauce begins to simmer.
  2. Raise heat up to medium-high, add salmon and cook on both sides until the desired doneness is achieved.
  3. Serve salmon, spooning the sauce on top.

Snap Pea Slaw

Snap Pea Slaw

Ingredients:

  • 2 cups snap peas, thinly sliced
  • 2 carrots, shredded
  • 1 clove garlic, minced
  • 2 tbsp toasted sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp parsley, minced
  • 1 tsp sesame seeds

Directions:

  1. In a bowl, combine all ingredients and mix well.

Braised Chicken Thighs

Braised Chicken Thighs

Ingredients:

  • 5 chicken thighs
  • 1/2 lemon, juiced
  • 1/8 cup soy sauce
  • 1 onion, chopped
  • 5 garlic cloves, minced
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup water

Directions:

  1. In a bowl, combine lemon juice, soy sauce, and chicken and let marinade for at least an hour.
  2. In a braiser or large pan, coat the bottom with olive oil and sear the chicken thighs.
  3. Add onions and garlic and saute.
  4. Add marinading liquid and water and bring to a boil.
  5. Reduce to a simmer and cook for an hour or more.

Honey Lime Cilantro Chicken Skewers

Honey Lime Cilantro Chicken Skewers

Ingredients:

1 chicken breast
1 lime
1/2 cup cilantro, chopped
1 tbsp honey
2 tbsp soy sauce
1 tsp garlic chili paste


Directions:

1. juice the lime and combine the juice with cilantro, lime, honey, soy sauce, and garlic chili paste
2. cube chicken and to the marinade mixture, let sit [in the fridge] for at least an hour
3. arrange chicken on skewers and grill

Mushroom Topping

Ingredients:

1 portabella mushroom cap
4 pearl onions, finely diced
2 garlic cloves, finely diced
1 tsp ginger, grated
1 tsp sesame seed oil
2 tbsp soy sauce, low sodium


Directions:

1. chop up the mushrooms into thin strips, about two inches long
2. heat oil in a pan over medium heat and saute onions until soft and lightly browned
3. add garlic and saute for a minute or until flavor is incorporated throughout
4. add mushrooms to the pan and cover, cook until mushrooms are soft
5. add soy sauce and cook for a minute or until flavor is incorporated throughout
6. remove from heat and serve

Braised Pork Top Loin Stew

Braised Pork Top Loin Stew

Ingredients:

3 lb pork top loin
2 tbsp soy sauce
1 head pressed garlic
1 tbsp salt
1 tsp pepper 
2 onions, chopped
2 carrots, diced
4 potatoes, diced
1/2 lb asparagus stalks, chopped
1/2 cup white wine
1 can vegetable stock
olive oil


Directions:

1. preheat oven to 250F; rub loin with sauce, garlic, pepper, salt; coat bottom of brasier with olive oil; set pork with fat side up and cover
2. cook pork for 6 hours in preheated oven
3. remove pork from pan, leaving juices behind, let rest; increase oven temp to 300F
4. in pan with juices, caramelize onions, add other veggies
5. remove fat from pork and slice thinly 
6. return pork to pan, pour white wine and stock over, cover with lid and cook for 1.5 hours
